Quesadilla Pizza

Recipe Ingredients:

  • 4 Mission® 8 inch Medium Flour Tortillas

  • 2 cups Cheddar Cheese shredded

  • 2 tablespoons Olive Oil

  • 1 cup Pizza Sauce

  • 1 teaspoon Cumin ground

  • 8 tablespoons Refried Beans warmed

  • 2 tablespoons Dried Green Chiles

  • 2 tablespoons Scallions or Green Onions thinly sliced

  • 4 tablespoons Ripe Black Olives sliced

  • 1 cup Monterey Jack Cheese shredded


Recipe Instructions:

1. Preheat oven to 450°F.
2. Sprinkle one tortilla with cheddar cheese. Place another tortilla on top and brush lightly with oil. Repeat with remaining 2 tortillas. Bake both in preheated oven for 4 minutes.
3. In a small bowl, combine pizza sauce and cumin and spread sauce on top of each tortilla.
4. Evenly spoon 2 Tbsp. refried beans on each tortilla and sprinkle each with chilies, green onion, olives and Monterey Jack Cheese.
5. Bake in preheated 450°F oven for 3 minutes longer or until cheese is melted.
6. Cut into wedges and serve.
