All-in-One Breakfast Burrito

Recipe Ingredients:

  • 4 Mission® Life Balance Flour Tortillas

  • Mission® Chunky Salsa, Medium as needed

  • 5 slices Bacon hickory smoked

  • 1 tablespoon Butter unsalted

  • 4 Egg beaten (whisk in mixing bowl)

  • 1 small Tomato garden style, small, cored, seeded and chopped

Recipe Instructions:

1. Place bacon between two paper towels on a paper plate. Cook in microwave 4-5 minutes, just until bacon is crisp. Break into pieces.

2. Melt butter in skillet.  Scramble eggs until soft and creamy (approximately 5-8 minutes). Add chopped tomato and bacon pieces. Cook an additional 30 seconds to 1 minute to fully blend the flavors.

3. Warm the tortillas.
4. Spoon egg mixture equally into center of tortillas. Fold burrito style.
5. Serve immediately with salsa as a garnish (as needed).

 Hints:

•Starting off the day with a protein rich meal like this one can help to prevent cravings later in the morning.
•Eggs are a source of lutein, a nutrient that is necessary to help prevent age-related macular degeneration, a disease that causes vision loss in the elderly.
•In this recipe, reduce the amount of saturated fat and add fiber at the same time by substituting 1/4 cup chopped sun dried tomatoes for the bacon.
•Experiment with flavors of bacon:  peppered, applewood smoked, etc.
•Add 1 Tbsp. of fresh sliced scallions to the end of step 2 for additional flavor,color and texture.
