Avery Island Nachos

Ingredients

  • 1/3 bag Mission® Yellow Round Tortilla Chips
  • 24 pcs SeaPak® Popcorn Shrimp, Oven Crispy
  • 1 tsp Vegetable Oil
  • 1 cup small chopped yellow onions
  • 1/2 cup small chopped Green Bell Peppers
  • 2 cups Nature Sweet® Cherry Tomatoes, 12 oz pk, quartered
  • 1/2 cup tap water
  • 1/2 tsp Tabasco® Brand Pepper Sauce
  • 1 tsp Salt-Free Cajun Seasoning
  • TT Kosher Salt
  • TT Black Pepper
  • 1 cup shredded mozzarella

Instructions

  1. 1Pre-heat oven to 450°F. Prepare shrimp according to package directions, reserve hot.
  2. 2In a skillet over medium-high heat, add vegetable oil and sauté onion and peppers for 3 minutes or until soft.
  3. 3Add tomatoes, water, Tabasco®, Cajun seasoning, salt and pepper. Simmer for 5 minutes or until most of the liquid has evaporated. Reserve hot.
  4. 4Place tortilla chips on an oven proof platter. Top evenly with reserved onion-tomato mixture.
  5. 5Top with mozzarella and reserved shrimp, bake for 5-7 minutes or until cheese is melted.

Hints:

1. For additional Cajun flavor add a pinch of Gumbo File’ powder and a bay leaf to the onion-tomato mixture.
2. The onion-tomato mixture can be made a day ahead and heated in a microwave before topping the tortilla chips.
3. Serve nachos with a bottle of Tabasco® for people who want a little spice.
