Garden Spinach Herb Pork Wrap

Ingredients
- 4 Mission® Garden Spinach Herb Wraps
- 4 country-style pork ribs (boneless)
- 1 bag fresh spinach
- 2 banana peppers, sliced
- 1 red onion, sliced
- 1/2 cup chipotles in adobo sauce, divided
- 1/2 cup mayonnaise
- 1/4 cup cilantro, chopped
- 2 tablespoons fresh lime juice
- Salt and pepper
- Garlic powder
- Olive oil
Instructions
- 1Brush pork ribs with olive oil. Season with salt, pepper and garlic powder to taste. Brush adobo sauce on pork ribs and broil until done (turn part way through cooking). Pull or cut meat. Set aside.
- 2For dressing, mix mayonnaise, ¼ cup adobo sauce and cilantro in a small bowl. Add lime juice and sprinkle salt and pepper to taste. Stir well.
- 3Heat Mission Wraps in a hot skillet 15 seconds on each side. Keep warm.
- 4On each wrap, place a portion of spinach in center. Add banana peppers and red onions. Arrange ribs on top. Drizzle with dressing.
- 5Fold bottom edge and roll from left to right. Serve.

Healthy Alternatives
1. Simplify and lighten up this recipe easily: skip cooking the ribs by substituting shredded leftover cooked pork loin or chicken breasts. Toss with adobo sauce to taste or, for a more kid friendly flavor, use your favorite barbecue sauce.
2. Limit fat but not flavor by substituting light mayonnaise for the full fat version.
