Ground Beef and Shredded Chicken Tacos

Ingredients

  • 8 Mission® Jumbo Taco Shells, warm
  • 1 1/2 lbs Lean Ground Beef
  • 2 1/2 cups Rotisserie Chicken (white and dark meat), shredded
  • 1 1/3 cup Water
  • 2 packets Reduced Sodium Taco Seasoning
  • 1/2 cup Shredded Iceberg Lettuce
  • 1/2 cup Tomatoes, chopped
  • 1/2 cup Red Onion, chopped
  • 1/2 cup Low-Fat Cheddar Cheese

Instructions

  1. 1Place a medium non-stick skillet over medium heat, brown ground beef approx. 5-7 minutes. Drain grease, add 2/3 cup of water and 1 packet taco seasoning and cook until water is all absorbed. Set the beef aside for assembly.
  2. 2Wipe out skillet and add shredded chicken, 2/3 cup water and second taco seasoning packet. Simmer for 5 minutes. Set chicken aside for assembly.
  3. 3To assemble tacos; fill 4 taco shells with 1/3 cup of warm beef, next fill the other 4 taco shells with 1/3 cup of chicken.
  4. 4Top each taco with 1 tablespoon each of lettuce, chopped tomatoes, chopped red onions and cheese
  5. 5Serve tacos together on a platter, 2 tacos per person.

Hints:

- For added flavor serve with sour cream, your favorite salsa or guacamole.

- Cook both meats the morning to help with timing for dinner.
