Mission® Mexican Pizza

Ingredients
- 4 Mission® Large/Burrito Flour Tortillas
- 1 cup Low-Fat Refried Beans
- 1 lb. Ground Chuck
- 1/2 tsp Salt and Pepper
- 1/2 cup Pizza Sauce, prepared
- 2 cups + 2 Tbsp Mexican Cheese Blend, shredded
- 1 cup Fresh Roma Tomatoes, chopped
Instructions
- 1To begin; pre-heat an oven to 350 degrees F.
- 2Place all 4 tortillas directly on the oven rack and bake for 8 minutes. Remove from the oven and reserve on your work surface.
- 3Heat the 1 cup of refried beans for 1-1 1/2 minutes in the microwave to get hot and reserve for the recipe build.
- 4Season the ground beef with salt and pepper and saute for 8 minutes in a non-stick pan, drain and reserve hot for the recipe build.
- 5To build 1 Mexican Pizza: Place 1 crisp tortilla on work surface. Evenly spread tortilla with 1/2 cup hot refried beans.
- 6Evenly top refried beans with 1 cup of the cooked seasoned ground beef.
- 7Top ground beef with second crisp tortilla and evenly spread 1/4 cup of pizza sauce over the tortilla. Top the pizza sauce with 1/4 cup + 1 tablespoon of Mexican cheese blend and 1/2 cup of chopped tomatoes.
- 8Repeat steps 5-7 for remaining 2 tortillas.
- 9Place both pizzas back into the oven on a cookie pan/flat pan, and bake for 5-6 minutes or until the cheese is melted.
- 10Cut each pizza into 5 equal slices and serve 2 slices per person.
Hints:
1. Spice up these pizzas by adding chili powder and crushed red chili flakes to the ground beef.
2. Exchange the ground beef with Mexican chorizo for an authentic taste.
3. You also can substitute taco sauce for the pizza sauce in this recipe.
4. For optional garnish, sprinkle with fresh chopped cilantro or chives.
