Ingredients
- 1 Mission® Sundried Tomato Basil Snack Wrap
- 1/2 cup mixed greens (also called field greens and mesclun mix)
- 1/4 teaspoon extra virgin olive oil
- 2 teaspoons thai peanut sauce, bottled
- 1/4 teaspoon ground black pepper
- 4 roasted red bell pepper strips, jar, sliced into thin strips
- 2 teaspoons fresh goat cheese
- 1 teaspoon pine nuts
Instructions
- 1Toss mixed greens with extra virgin olive oil and ground black pepper. Reserve.
- 2Microwave wrap on high for 10 seconds.
- 3Place wrap on clean work surface and place tossed greens on the top middle of the wrap.
- 4Place the red bell pepper strips on top of greens, crumble the fresh goat cheese on bell peppers and top with pine nuts
- 5Fold up the bottom third of the wrap to start to cover the salad ingredients; then fold in the sides to form an open ended wrap.
- 6Enjoy!
Hints:
Alternatives:
1. Substitute your favorite crumbled cheese for the goat cheese.
2. To add some protein, slices of pre-cooked grilled chicken, seafood or fish could be added.
