  • Ingredients

    • 12 Mission® Small/Fajita Flour Tortillas

    • 24 fl. oz.of your Favorite Lager Beer

    • 4 cups Flour

    • 1½ tsp. Sea Salt

    • 2 quarts (4 cups) Peanut Oil

    • 2½ lbs. Cod Filets, cut into 2" x 1" pieces

    • 2¼ cups Shredded Jalapeno Jack Cheese

    • 2¼ cups Shredded Romaine Lettuce

    • 2 Avocados, peeled and thinly sliced

    • Creamy Salsa Verde:

    • 1 Ripe Avocado

    • 3 Tomatillos

    • 2 Cloves Garlic

    • 1/2 White Onion

    • 1/2 Fresh Jalapeño (1/2 keeps it very mild, add more for more heat)

    • Juice from 1 Lime

    • 3 tbsp. Chopped Fresh Cilantro

    • 1 tbsp. of Honey or Agave

    • Dash of Salt

  • Instructions

    • Preheat oil in deep fryer to 350°F.

    • In a mixing bowl, add beer to flour in a steady stream while whisking until you achieve a smooth batter consistency. Season with sea salt.

    • Add 3 cod filet pieces to the batter and turn to coat thoroughly. Working one piece at a time, lift fish, let excess batter drip off and carefully lower into hot oil (tongs are helpful). Deep fry battered fish for 5 to 6 minutes or until golden on the outside and cooked through on the inside. Drain and season with more salt if desired. Repeat with remaining fish.

    • Heat tortillas in a sauté pan over medium heat, and top each with 1 tablespoon of cheese. Fold and fill each with 1 tablespoon shredded lettuce, 1 piece of beer battered fish, 1 slice of avocado and a drizzle of creamy salsa verde (see related recipe).

    • Fold tacos and serve.

    • Creamy Salsa Verde:
      1. Remove tomatillo husks and rinse off. Roughly chop and add to food processor.
      2. Cut open avocado, remove pit, and add to food processor.
      3. Peel garlic, roughly chop, and add ½ white onion, jalapeno (if desired), and cilantro.
      4. Add lime juice, honey/agave, and a dash of salt.
      5. Pulse all ingredients in food processor until you reach desired consistency.
