  • Ingredients

    • 1, 15 oz. can of Chickpeas, drained, rinsed

    • 1 clove Garlic

    • 1½ Large Avocado

    • ¼ cup Yellow onion, diced

    • ½ tsp. Salt

    • 1½ tbsp. Lemon juice

    • 1 tbsp. Tahini

    • ⅓ cup Olive oil

    • 4 Mission® Burrito Whole Wheat Tortilla

    • 8 slices Prosciutto

    • 4 slices Provolone cheese

    • 1⅓ cup Arugula

    • ½ cup Roasted red pepper strips, roughly chopped

  • Instructions

    • In a food processor, combine chickpeas, garlic, avocado, onion, salt, lemon juice, and tahini. Pulse until well combined. With the motor running, slowly add olive oil in a steady stream until the hummus is smooth. Reserve avocado hummus refrigerated until ready to use.

    • To serve, for each wrap, spread 2 tbsp. of the avocado hummus on a tortilla. Top with one slice of provolone cheese, two slices of prosciutto, ⅓ cup loosely packed arugula, and 2 tbsp. chopped red pepper strips. Fold in one end of the tortilla and roll to create a wrap, and grill in a panini press for 2-3 minutes or until cheese has melted.

  • Tips

    If you don’t own a panini press, place the wrap in a dry pan over medium heat and cook for approximately 2 minutes per side. Reserve remaining avocado hummus to serve with Mission® Tortilla Chips as a snack or side.
