4 Mission® Carb Balance Whole Wheat Soft Taco Tortillas
2, 5 oz. cans Albacore tuna in water, drained
1 cup Quinoa, prepared
1 cup White beans, prepared, rinsed and drained
2 tbsp. Red onion, diced
½ cup Grape tomatoes, halved
2 tbsp. Fresh mint, chopped
½ cup Greek yogurt dill and feta dressing, prepared
Salt and pepper to taste
1 cup Spinach, fresh
In a medium bowl, combine tuna, quinoa, white beans, diced onion, tomatoes, and mint. Add Greek yogurt dressing and stir to combine. Season with salt and pepper to taste.
To assemble: Place ¾ cup of mixture into each tortilla. Top the mixture with ¼ cup fresh spinach and roll the tortilla into a wrap. Repeat for each tortilla. Serve.
