  • Ingredients

    • 4 Mission® Carb Balance Whole Wheat Soft Taco Tortillas, torn or cut into strips

    • 2 tsps. Olive oil

    • ½ cup Yellow onion, diced

    • 1 tbsp. Fresh oregano, chopped

    • 8 Egg whites, lightly beaten

    • Salt and pepper to taste

    • ¼ cup Queso fresco cheese, crumbled

    • 2 cups Pinto beans, prepared, warm

    • Salsa as needed

  • Instructions

    • In a sauté pan, over medium heat, heat olive oil.

    • Add tortilla strips and diced onion and cook until the tortillas are golden brown and lightly crisp, and the onions are soft, 6 to 8 minutes.

    • Add the beaten egg whites and oregano to the tortillas in the pan and cook, stirring occasionally, until the eggs are set and cooked through, 4 to 6 minutes. Season with salt and pepper to taste, then top with the crumbled queso fresco. Serve immediately.

    • To serve: Arrange 1 ½ cups Migas and ½ cup pinto beans onto each plate. Serve with salsa, as desired.
