4 Mission® Carb Balance Whole Wheat Soft Taco Tortillas, torn or cut into strips
2 tsps. Olive oil
½ cup Yellow onion, diced
1 tbsp. Fresh oregano, chopped
8 Egg whites, lightly beaten
Salt and pepper to taste
¼ cup Queso fresco cheese, crumbled
2 cups Pinto beans, prepared, warm
Salsa as needed
In a sauté pan, over medium heat, heat olive oil.
Add tortilla strips and diced onion and cook until the tortillas are golden brown and lightly crisp, and the onions are soft, 6 to 8 minutes.
Add the beaten egg whites and oregano to the tortillas in the pan and cook, stirring occasionally, until the eggs are set and cooked through, 4 to 6 minutes. Season with salt and pepper to taste, then top with the crumbled queso fresco. Serve immediately.
To serve: Arrange 1 ½ cups Migas and ½ cup pinto beans onto each plate. Serve with salsa, as desired.
