4 Mission® Flour Burrito
2 cups Refried pinto beans
¼ cup Roasted red peppers, prepared, diced
4 tsp. Shallots, minced
½ cup Tomatoes, diced
1 cup Mozzarella cheese, shredded
¼ cup Fresh Basil, chopped
4 tsp. Fresh thyme
Preheat oven to 400° F. Place a cookie sheet upside down in the oven on a rack.
To assemble: Spread each tortilla with ½ cup refried beans. Top the beans with 1 tbsp. roasted red peppers, 1 tsp. shallots, 2 tbsp. diced tomatoes, and ¼ cup mozzarella cheese. Repeat for each tortilla.
Carefully place the pizzas on the hot cookie sheet in the oven. Bake the pizzas in the oven until the cheese has melted and the edges of the tortillas are golden brown, 7 to 10 minutes. Sprinkle each pizza with 1 tbsp. basil and 1 tsp. thyme. Serve.
