Quesadilla Pizza

Ingredients

4 Mission® 8 inch Medium Flour Tortillas
2 cups Cheddar Cheese shredded
2 tablespoons Olive Oil
1 cup Pizza Sauce
1 teaspoon Cumin ground
8 tablespoons Refried Beans warmed
2 tablespoons Dried Green Chiles
2 tablespoons Scallions or Green Onions thinly sliced
4 tablespoons Ripe Black Olives sliced
1 cup Monterey Jack Cheese shredded

Instructions

1. Preheat oven to 450°F.
2. Sprinkle one tortilla with cheddar cheese. Place another tortilla on top and brush lightly with oil. Repeat with remaining 2 tortillas. Bake both in preheated oven for 4 minutes.
3. In a small bowl, combine pizza sauce and cumin and spread sauce on top of each tortilla.
4. Evenly spoon 2 Tbsp. refried beans on each tortilla and sprinkle each with chilies, green onion, olives and Monterey Jack Cheese.
5. Bake in preheated 450°F oven for 3 minutes longer or until cheese is melted.
